ALU MATTER INDIAN CURRY From Pakashala -Indian Kitchen

ALU MATTAR 


  • A FINE blend of Indian spices, flavours and taste, aloo matter or aloo with green  peas is a simple and yet delicious vegetable recipe. 
  • Main Ingradients 
  • Potato                                : 1/4 kilo 
  • Green Peas                        : 1/2 cup(150 grams)
  • Onion                                     : 3 medium
  • Tamtos                                  : 150 grams (around 3 medium)
  • Garam Masala                     : 1/2 tsp
  • Corriander powder               : 1 tsp
  • Cumin Powder                     : 1/2 tsp
  • Chilli powder                         :1 tsp (or as per your taste)
  • Salt                                          : 1 tsp (or as per your taste)
  • Fennel seeds                           : 1/4 T sp
  • Ghee/Dalda                              : 2 table spoons
  • Edible oil                                    : 2-3 Table spoons
  • Sugar                                          : 1/4 th spoon (optional)
  • Ginger and Garlic Paste           : 1 Table spoon
  • Aaam chur(dry mango powder)  ; 2 tsps (alternative ly you may add little tamarind juice for sourness)
  • For Garnish : Coriander leaves and Mint Leaves 
  • Method 
  • 1.Boil tamatos and remove skin and make paste in Blender
  • 2..Cut Onions into cubes and Make a coarse Paste and Keep aside
  • 3.Boil Potato and green peas separately in pressure cooker and remove skin of Potato and cut into cubes Just 1-2 whistles are enough) else potato becomes mushy.
  • 4.Add oil to frying pan,add cumin seeds and Fennel seeds (somphu) 
  • 5.Add Ginger Garlic paste to oil in frying pan,Cook till it looses its raw flavour
  • 6.Add Onion Paste and fry for another 5 minutes
  • 7.Add Coriander powder,Turmeric,Cumin powder and Amchur(Dry mango powder)Chilli powder and Salt,cook for another 3 minutes
  • 8.Add Tomato paste/Pure and cook till oil releases from curry with bubbles
  • 9.Add Potato cubes cook for some time,then add Green peas 
  • 10.Add water and add ghee 
  • 11.Add garam masala,check the salt
  • 12.Garnish the recipe with coriander and Mint leaves 
  • Serve as side dish with poori,Chapati,pulav or plain rice
