MINT KULCHAS (POODINA KULCHAS) MIXED VEG INDIAN BREAD From Indian Kitchen -Pakashala

POODINA KULCHA 

Otherwise known as mixed vegetable bread ,it is very recipe which can be cooked with very few ingredients,side dishes for this item are Dal fry,Panner butter masala and all koftha curries
 


MAIN INGRADIENTS

For Making Dough 

250 grams Maida (All purpose flour)

1/4 th Tsp Dry Yeast 

1/4 th  tsp of Baking Powder

150 ml (3/4 th cup) warm Milk

1 tsp          Salt

1 tsp          Sugar

11/2 tsp     Any Edible Oil 

1 table spoon  Sour Curd 

FOR FILLING 

1 Bunch of poodina leaves (Mint Leaves) cut into small pieces(chopped) 

3/4 th Ajwain (Carom seeds-oma-vaamu in telugu)

3/4 Tsp  Salt

3/4 Tsp  Red Chilli powder

1 Big Onion - Very finely chopped

2 tbsp of Coriander leaves

METHOD

1. Dissolve Yeast in 2-3 tbsp of Warm water
2.Sift Maida.Add Sugar and Salt
3.Put Curd in the centre of Maida heap in bowl and sprinkle baking powder on it.Wait for few seconds till it starts bubbling
4.Add Oil and Disolved Yeast,Knead with warm milk to a dough,The Dough should be neither be too soft nor too stiff.It becomes loose after it is kept away for few hours
5.Grease a polythene,brush the dough with oil.Keep the dough in polythene paper,cover it with a pan inverted over it .Keep in sun or a warm place for 3-4 hours
6.The Dough Swells,Knead again,Keep aside 

7.Mix all ingredients of the filling as mentioned above

8.Make Balls.Roll out to the desired Size,Sprinkle filling all over.

9.Press gently with rolling Pin (Belan/appadaala karra in telugu) and press with your fingers all over 

10.Heat the Pan/Tawa and place the pressed Kulcha on Tawa 

11.Cook till brown spots appear turn to both sides,Serve Hot
