SIMPLE AND EASY NAVRATAN KORMA MIXED VEGETABLE CURRY - RESTURANT STYLE

This dish is named so as a tribute to the original navratan, that is, nine jewels or the nine courtiers of the Mughal Emperor Akbar.

So the dish Navratan Korma is made with nine jewels and these nine jewels can be an assortment of nine veggies or nine garnishing ingredients. 



Main Ingredients:



For Making the Paste 



1 big onion( chopped/diced )(Boiled)
1/2 cup cashewnut pieces(Boiled)

10 flakes of big garlic (Boiled)
1 piece ginger
4-5 green chillis



For Gravy making 


250 gm cauliflower
250 gm carrots
250 gm green peas
250 gm green beans
2 table spoons of paneer cubes
1/2 cup pineapple pieces
1 tbsp raisins
1 tbsp walnut pieces

1/2 table spoons of Apple pieces  (optional)4 tbsp ghee
1 tbsp coriander and cumin seeds powder
1 tbsp garam masala
1/2 cup cream
coriander leaves for garnishing
pomegranate seeds for garnishing

Turmeric (optional) I normally donto use in my dishes as i want that rich white  creamy look (you may us if u like it)

Preparatory



1)Boil onion pieces,cashew nuts and garlic,Strain the water and keep it aside 



2)Boil the vegetables ( till 80%,other wise vegetables become mushy) strain the water and keep it ready 



3)Lightly Fry the Panner Cubes (shallow fry)



Method:


- Grind the boiled onion, garlic and cashew nuts along with ginger and chillies into a smooth paste.Add little salt 




- Add Little edible oil to the Kadai/wok 
- Heat ghee in a pan. 


 

- Once the ghee is hot, add the onion paste and saute it for a minute or two.





- Add the coriander and cumin seed powder, garam masala,Chilli powder (optional,you may replace with white pepper or black peppr) and water and mix the ingredients well. 



- Add the steamed vegetables - cauliflower, carrots, green peas, green beans, lightly fried paneer cubes, dry fruits like raisins, cashew nuts and walnuts and tint pineapple cubes , chopped coriander leaves and mix all the ingredients well.




- You may all add few pieces of apple and grapes (optional)


- Add little water to the above ingredients and let it boil.





- Add slightly fried panner cubes, salt to taste and mix well.


- Just before getting it off the flame, add the fresh cream and cook it for just about 1 minute.



- Garnish with some fresh pomegranate seeds and the delicious Navratan Korma is ready to be served.
